About Chef Gretchen Chef Gretchen Raymond received her bachelor's degree from the State University of New York at Plattsburgh in Hotel and Restaurant Management and is a graduate of the Culinary Institute of America. She has over 15 years experience in the culinary industry including fine French training under MasterChef and James Beared Award Winner, Chef Jean-Louis Gerin. She has also worked in elite off-premise catering as well as running a 500 seat catering facility. Chef Gretchen has taught for New York's Institute of Culinary Education, and was the Executive Chef of Marketing for Bestfoods. For the past 8 years Chef Gretchen has entertained one of the most fiscally prominent clientele in the United States. Gretchen is the founder and president of Chefgretchen, LLC. Currently Chef Gretchen is working on a DVD series with producer and partner Michael Goldman Due for Early Spring 2008 release. Instructional Kitchen Chef Gretchen’s Instructional Kitchen, located in Rye Brook, New York, is debuting a Spring Schedule of Classes with a focus on Skill Development and Entertaining. The Instructional Kitchen has three complete, state of the art stations, and class size is limited to small groups to ensure personalized attention and proper hands on experience. Her series of Technique Instruction concentrates on teaching a clear understanding of “Cooking Fundamentals.” When the Fundamentals of Cooking are properly understood, the creation process can begin to flourish. Recipes are used as a guide to teach concepts, but will seem less important as you learn a complete new way of interpretation. With proper comprehension of basic culinary principles, you will learn not only to cook, but you will begin to learn how to “Create.” Chef Gretchen has spent the past 8 ½ years of her culinary career entertaining one of the most fiscally prominent clientele in the world. Her entertaining classes are based on the food that she has developed and prepared in this private setting. The Entertaining Menu Classes focus on the practical applications of planning, prepping and execution. You will learn how to think in steps, budget your prep time, prepare for service and, most importantly, you will understand “How It All Comes Together in the End.” |
